
Tomato pizza base sauce

You can’t compare a decent homemade pizza tomato base sauce to a shop bought one. Full stop. No return. End of story.
Once again I have perfected this over a long time and this is it. I want to address the elephant in the room... anchovies. Oh god I hate them whole on anything, anywhere at anytime BUT in a sauce, let them little fishy suckers dissolve and I totally promise you that you will not taste fish. They add a salty next dimension and I will never go back to not using them in sauces ever although I would still categorically NEVER eat them alone. Please trust me on this one 🙏
Another thing, which I have said before... buy decent tinned tomatoes. I know it is tempting to but the cheapest of cheap because they are just tinned tomatoes right... please don’t. Spend an extra 50p on decent ones, the more tomato content the better, it will change your cooking world. Same with a sausages BTW but that’s another recipe!
Anyway.. please enjoy 🤓
Ingredients
6 Garlic cloves peeled
2 Anchovy fillets
1 tin of Chopped/crushed tomatoes
Bunch of fresh basil or tablespoon of dried
Sugar
Salt
Pepper
Put a tablespoon of olive oil in a pan at a medium heat and add the cloves of garlic slightly bashed so the flavour can get out... remember how many you have put in!! Add the anchovies now too if using but they are not essential NB - I hate anchovies but they are so good in this, please use if you feel you can but for veg/vegan diets it’s not essential 🤓
Once the garlic is slightly browned and the anchovies have dissolved, add a tin of chopped/crushed tomatoes.
Add a generous pinch of salt, pepper and sugar and stir in.
Once bubbling a bit remove the garlic cloves and add a decent handful of ripped or chopped fresh basil or a teaspoon of dried basil.
Let it simmer for 10mins or so, taste and adjust seasoning if needed.
Take off the heat and let it cool before putting it on the pizza dough.
