
Sausage pasta

Oooohh this is a good one!! Super tasty and easy.
I know it can be daunting and probably seems initially expensive buying these different herbs and spices but firstly they last forever, I’m sure my mama has some 10yr old ones in her cupboard (don’t tell her I said that!) and secondly if you like what I’m doing and want to try more of my recipes, we WILL be using them again so you won’t be buying them for a one off thing and next time it won’t cost anything!
I will be posting a few different versions of this, it’s so adaptable. I have experimented with lots of different flavours and ingredients with sausage pasta, it’s one of those ones that can use up all sorts of stuff. So I’ve jotted a few down that work well... to be continued 🤓 enjoy..
Ingredients
Pack of 6 herbed sausages
Olive oil
2 Garlic cloves crushed
3 Shallots chopped
1/2 a red chilli finely chopped
1 tablespoon of dried oregano
1 tablespoon of Italian seasoning
Salt
Pepper
2 large fresh tomatoes chopped or a handful of cherry tomatoes halved
About 250g of good quality pasta
50g of finely grated Parmesan plus extra to serve
Fresh sage and rosemary finely chopped (optional)
In a high sided frying pan, add a tablespoon of olive oil and gently heat.
Fill another pan with water for the pasta and turn up high to boil. Add a good couple of pinches of salt to the water. While this is boiling crack on with the rest.
With a sharp knife, take the casing off the sausages and break them up into roughly 1cm pieces and add to the oil.
Sprinkle with salt (don’t go mad, there’s salty water and Parmesan going in too) cracked black pepper, oregano and Italian seasoning. Mix it all around so the sausage is coated in the seasoning.
Let them fry for a few minutes moving them around until browned.
Add the shallots, garlic, tomatoes and chilli.
Mix everything together and fry on a medium heat. If it starts to stick or get too dry at any point, add a bit of water from the pasta pan.
Add your pasta to the pan of boiling water and follow the packet instructions less a minute.
Turn up the heat a bit on the sausage mix and add a few good tablespoons of the pasta water.
Add the Parmesan to the sausages and mix it around, it will go glossy and a bit creamy.
Add the pasta straight from the water into the sausage with a slotted spoon, no need to drain, rinse or drip dry the pasta, just chuck it straight in.
Mix everything together, it should be glossy like the picture below. If it looks dry, add some more pasta water, if it’s too wet just leave it on the hob for a bit mixing it around until it thickens up. If you are using fresh herbs too (I always do but I’m a herb junkie!) add them now and mix in.
Serve with a good sprinkle of grated Parmesan on top
