One pan chicken thighs

This is a lovely, super simple mid weeker. You can shove everything in a pan and do other mid week stuff for 20ish minutes a time whilst it is in the oven doing its thing.


This recipes could be anything you want it to be... add different veg etc if you like but this one is my fave out of all the versions I have played with.


A little option I like to do sometimes is to sprinkle some panko breadcrumbs on for the last 5mins šŸ‘

A winner every time, packed with the good stuff, enjoy 😊


This will serve 4 easily..

Ingredients


  • 5/6 Boneless skinless chicken thighs

  • 100g chorizo cut into 5mm slices

  • 2 red bell peppers cut into 2cm pieces

  • 2 medium red onions roughly chopped

  • 1 leek cut into 5mm slices

  • 1 large sweet potato or 2 medium cut into 3cm chunks

  • Big handful of cherry tomatoes

  • 6 new potatoes cut into 2cm chunks

  • 1 large courgette halved longways and cut into 1cm pieces

  • 2 Garlic cloves finely diced

  • 1/2 Fresh red chilli finely diced (more if you want it hot)

  • 2 teaspoons of Harissa paste

  • 2 tablespoons of olive oil

  • Pinch of salt and freshly ground pepper

  • 80g Feta cheese

  • 1 ball of mozzarella

  • Handful of chopped fresh basil


Pre heat your oven to 180c degrees.


In a large oven proof dish put your bell peppers, courgette, leeks, onions, new potatoes, sweet potatoes, chorizo, garlic, chilli and tomatoes.


Add salt, pepper, harissa paste and oil to the veg dish. Get your hands involved and mix well!


Put in the oven to roast for around 20mins.


Take the dish out of the oven and put the chicken thighs on top of the veg. Mix around a bit so the chicken is coated in the roasting juices but make sure they are back on top once you’re done.


Put the dish back in the oven for another 25mins.


Take the dish out and crumble the feta all over and tear up the mozzarella into chunks and place on top in random places, then put the dish back in the oven for another 10mins or so or until the chicken is cooked through and the mozzarella is melted.


Take out of the oven when it’s done, sprinkle on the basil and serve
