Mini stuffing ball bites

These are a lovely little snack for anytime.

Who says you need a roast dinner to have stuffing balls? No one EVER that’s who! Watching a movie, going on a picnic, nibbles and drinks with friends, sports on tv.. you name it, these little gems have you covered. Obviously they are perfect with a roastie too but I’m just giving you ideas here

So quick and easy, so tasty (too tasty!) and a winner every time. Enjoy.


This will make around 25 balls


Ingredients


  • 400g of sausage meat - I usually use sage and onion.

  • 1/2 a red onion very finely diced

  • Handful of nuts chopped finely - walnuts, almonds, peacans work well

  • Handful of panko breadcrumbs

  • 1 teaspoon of whole grain mustard

  • 3 rashers of smoked streaky bacon

  • Handful of mixed fresh herbs finely chopped - sage, thyme, rosemary

  • Flaked salt

  • Fresh black pepper

  • 1/4 teaspoon of ground nutmeg

  • 2 tablespoons of Olive oil

  • Flour


In a big bowl add everything except the flour and get stuck in with your hands to mix well into a big ball.


Line a baking tray with grease proof paper and pre heat the oven to 180degrees fan


Sprinkle some flour onto a clean surface and pinch off little bits from the big stuffing ball and roll into small balls, smaller than a golf ball, and put onto the baking tray.


Once you’ve done this with all the meat, put into the oven for around 30-40mins until they are nice and crispy and browned
