Chicken Gyros with homemade Tzatziki

This is amazing. Full stop. Grab a beer to go with and you’ll be transported to a Greek taverna somewhere lovely, just chilling and watching the sun go down 🥰


There is a few elements but it really isn’t as daunting as it seems and it’s very much worth it!!!


This is good for 4 pitas with a few left overs to pick at.


PS - if you can get hold of Greek pitas DO IT. They are very hard to come by in the UK, always tend to be out of stock or a million pounds for 10!


I hope you enjoy these as much as I do..

Ingredients

For the chicken -

  • 3 chicken breasts

  • 3 heaped tablespoons of Greek yogurt

  • 1 teaspoon of ground cumin

  • 1 teaspoon of paprika

  • 1 teaspoon of ground coriander

  • Splash of red wine vinegar

  • 4-5 tablespoons of olive oil

  • Juice of half a large lemon

  • 1 heaped tablespoon of dried oregano

  • Couple of big pinches of flaked sea salt and ground pepper

For the Tzatziki -

  • 5 generous tablespoons of Greek yogurt

  • Half (about 6inches) of roughly peeled cucumber

  • Juice of half a lemon

  • 2 tablespoons of olive oil

  • Pinch of flaked salt and ground black pepper

  • 1/2 teaspoon of dried oregano

  • 1/2 teaspoon of dried mint

  • 1 clove of garlic crushed

For the Fries -

  • 3 large Maris piper potatoes skin on

  • Couple of tablespoons of olive oil

  • Pinch of flake salt and ground black pepper

  • Heaped teaspoon of dried oregano

To serve -

  • 4 pitas and salad to serve. I use cucumber, red onion and lettuce.


For the chicken -

Chop your chicken breasts into long thin pieces and put into a large bowl.


Add all other ingredients and mix well. Cover with film and leave for at least an hour or two, preferably morning to night in the fridge.


Once marinated nicely, put a frying pan on the stove and add a couple of tablespoons of oil. Warm the oil on medium-hot and add the chicken.


Fry the chicken for around 10mins then turn it over. Do the same with the other side then turn up the heat and let the moisture reduce and all those flavours get sucked into the chicken. Turn the chicken once whilst the heat is up. When the juices are all gone turn off the heat, they’re ready!


For the tzatziki -

Grate you cucumber into a sieve over a bowl and add a sprinkle of salt. Leave whilst you do the rest.


In a bowl add all other ingredients and mix well.


Now back to the cucumber. It will have started to drip moisture into the bowl. You want to get as much moisture as possible out of it, personally I get stuck in with my hands and squeeze!


When you are happy with that, add it to the yogurt mixture and mix well, taste, add a bit more of whatever you want if you’re not happy with it. That’s done, store in the fridge.


Oven cooked fries -

Put a sheet of baking paper onto a baking tray.


Slice the potatoes long ways into about 6mm slices. Put 3 slices on top of each other and cut them into even 6mm chip shapes. Do the same with all and put in the tray.


Dab them dry to get the starch out with kitchen roll.


Add oil, salt, pepper and oregano and toss everything together. They are now oven ready.


Cook at 190degrees when you’re ready, they will take about 30-40mins check them and flip them around about half way through so the cook evenly.


Time everything to be ready at the same time. It might seem like a lot but the tzatziki and salad can be done in advance as well as the chicken so it’s not that bad I promise :)


Serve with pita bread and salad. Have everything in different bowls/plates then stuff the pitas with a bit of everything and get stuck in!!
