Is there anything better than a crispy chicken nugget?? Answer - nope ( until the next recipe anyway!)
They definitely do not have to be shop bought ‘reformed’ chicken in a shoddy coating with lots of things in the ingredients list that none of us understand.
Here’s how to make a healthy alternative which you will use again and again. It’s fun, easy and super tasty 🤓
Ingredients
2/3 chicken breasts
2 eggs beaten
50g approx of plain flour
100g approx of panko breadcrumbs
Olive oil
Salt
Pepper
Preheat the oven to 180 degrees
Get three shallow bowls, put the flour in the first, the eggs in the second and the panko in the third. Add a good glug, maybe 2 tablespoons, of olive oil to the panko with a generous pinch of salt and pepper.. mix.
Cut your chicken breasts into either chunks on strips, whatever you prefer. No need to season because your panko mix is seasoned.
Coat them in flour, then the beaten eggs then the panko mix. Pat the panko into the chicken nice and firm ☺️
Put them on a baking tray and oven bake for around 30mins until cooked through. Turn them over half way through cooking
